In the books, Ser Barristan had grown a long beard in order to not be recognized and joined Dany in disguise (as one "Arstan Whitebeard") to first check whether she would make a good queen and be worthy of his service. He's a loyal man but didn't really think either Dany's father Aerys or even Robert were particularly good kings in the end. He served them out of duty, but having been released from his position allows him the freedom to choose now.

I strongly believe that Mel is gaslighting both Davos and Stannis. I don't think her being on the ships would have made a difference. Stannis is so defeated though, he'll listen to anything she says. She's also guilting Davos into thinking he made an error by convincing Stannis to leave her behind. Also that line about his son was such a lowblow. Margery is smart to win over the commoners. If you play it out as a populist and get the backing of the citizens, the other nobility won't really be able to do as much as they would want to you lest they risk a revolt like when Joffrey lashed out for the cowpie thrown at hin. It is partially a ploy, but Margery is a benevolent woman. Baldy is a POS, I mean I hate all slavers equally, but yeah this dood is a real piece of work. Barristan Selmy has not been seen since season 1. We last saw him being stripped of his rank by Cersei. He chose to leave and join with Dany. He also originally served the Targaryens, so Dany now has a pair of badasses in Barristan and Jorah.

Margaery is very politically savvy, she knows it's easier to rule if the people love you. Highgarden (her house) is also the breadbasket of the 7 kingdoms so they brought plenty of supplies to the capital after it suffered through the battle to further gain the love of the people. Now she's also making a play for power to become the influence behind the king instead of his mother. The Unsullied are inspired by a couple different historical groups. The Janissaries and Mamalukes were slave soldiers in the Arab and Ottoman empires, usually boys who were taken from other countries. However they were highly educated and ended up becoming a strong political faction themselves. As far as the Unsulied training, it's similar to the Spartans in terms of how brutal it was, and there was a Spartan institution called the Krypteia that had spartan boys find and kill a slave (although not a baby, usually an adult man) as a rite of passage and also to get them used to killing. No drugs or castration involved though. Also, Barristan Selmy was the King's Guard commander that the queen fired. Not the best political move she made.
