In "Our Mrs. Reynolds", Mal says to Saffron, "Why the act? All the seduction games, the dancing about folk. There has to be an easier way to steal." She replies, "You're assuming the payoff is the point."
YoSaffBridge isn't in it for the money; she's in it for the thrill of the game. Coming up with an idea, planning how to pull it off, manipulating people to make it happen -- these are ways where she can demonstrate her superiority over other people. It provides her with a sense of worth.

I absolutely love Monty in this episode. He has such a tiny role, only one single scene, but in that tiny presence they're able to sell a full friendship and history between the characters. Plenty of shows do "Oh, this guy I've never mentioned before and will never mention again after this episode is actually a great friend of mine", but here you believe it (Even if only for a few minutes).
If you go back and rewatch the scene with Mal & Saffron on the shuttle, you can actually SEE her take Mal's gun out of his holster. It's very subtle, just a small motion of her shoulder/arm at the bottom of the screen as they talk. I didn't catch it until somebody else pointed it out to me, but I love seeing it again every time.
There's another tiny background event in this episode which you can't notice on first watch. I won't say what it is here (spoilers), but in the future I'll say "You can see XXXX in 'Trash'!"

Simon's speech about how he would never harm Jayne if he is on the surgeon's table is excellent and a great counterpoint to YoSaffBridg's multiple layers of cons.
