Free Meal Prep Recipe: Shrimp Alfredo

ingredients:
2 boxes or bags of your perferred short pasta e.g. penne rigate, shells, rotini
3-4 containers of your favorite alfredo, lately I've been using 3 of those 18oz bertolis (I think)
1 3lb bag of bulk raw, tailless shrimp.
1/4 cup olive oil
a healthy amount of Italian bread seasoning
1 large container of baby spinach, washed and then reduceed

4-6 cups of your preferred veggie mix
or both, it's your meal prep
Preparation:
thaw shrimp under the sink if needed, remove to paper towel-lined baking sheet and lightly salt for 15 minutes
add shrimp to a box and mix in olive oil and bread seasoning until thoroughly coated, air fry in multiple batches according to you instructions or baking on a parchment paper lined tray at 400F-205C for 20 minutes.
Boil water for pasta and cooked 2 minutes shy of what the bag tells you. When the pasta is done cooking reserve about a pint of starchy water and drain the rest. Return the pasta to the pot when done straining
In a large, high walled saucepan combine sauce, pasta water, and veggies of your choice and stir until cohesive. Pour into pot with pasta and then add shrimp, stir
Portion into about 1 and a half cup serving into freezer safe containers. Makes about 10-12 portions. Remember to let fully cool before adding to the fridge and then when cold to the touch take all the portions except what you'll eat in the next two days and place in freezer. When you take one portion out of the fridge to eat, take one from the freezer and put it in the fridge to thaw.
