Standalone Cooking Segment: Dorito-Coated Cheese Sticks

1 8oz block of mozzarella cheese
1 pint buttermilk
About 2 cups of flour for dredge
One quarter-cup of Italian bread seasoning
1 family-size bag of the Doritos of your choice

slice mozzarella into small, thin sticks no heavier than one ounce each. set aside and prepare breading station
to set up breading: mix flour and bread seasoning in one bowl for dredge, in another bowl pour in pint of buttermilk and whisk in about half a cup of the dredge to thicken, and for the final station use a food processor attachment on a hand blender to pulverize all your Doritos into small crumbs.
Dredge, wash, and coat cheese sticks in crushed Doritos and set aside on a parchment paper lined sheet tray. Place in freezer for at least overnight but preferably 24 hours.
Air fry cheese sticks at 350 degrees F for no more than 10 minutes, optionally turning in the middle of cooking. It helps to do these in smaller batches.
