Salting the beef is to help tenderize it. You've got a great butcher who gave you a well marbled cut of chuck. Normally, chuck is poorly marbled, it's tough and so needs ternerizing. Neverthrless, I would have rinsed off some of the salt. You can always salt the meat at the table. Using fresh everything, you once again made a superior version of an American dish. Great job.

Reread the comments in meatloaf. I put a small bowl of salt next to the onion while you are chopping. The salt will absorb the fumes. When you're done touching the raw onion, rub your fingers on anything that is stainless steel. It will remove the strong odor of the onion.
