Since you're so interested in this, the answer is that there are records going back to 1300 with the first use of the term in 1490. It is definitively French and origin although now we braise the chicken before we put it in, and back then they stewed the whole thing. Julia child's spoke poetically on this saying that a fricassee was something between a saute and a stew since you first saute the chicken and then you stew it.
