We only do steak for special occasions, so we always buy filet mignon (and my husband feeds some of his steak to our cat before taking his first bite). This is the steak cooking method my husband uses. I'm sure it's from IG, but I have no idea where it came from specifically. Perfect Steak 1. Let sit for 30 minutes and roll in finely ground salt and pepper 2. Roll the sides 3. Pan to medium high heat add some oil and sear 4. Flip after a minute 5. Rest two minutes (on a plate off the heat) 6. Add 5 tablespoons butter after turning the pan to low heat. 7. When the butter starts to foam put the steak back and constantly baste 8. Every 30 seconds flip the steak and keep basting 10. 10. When it hits around 90 internal, rest 5 min (on plate) 11. add garlic 12. Put the stake back on and continue to baste with thyme 13. When it hits 125 internal blast the heat and cook for one minute 14. One final six minute rest

oh and I cooked it to rare to eat at med-rare (it keeps cooking a bit after you pull it off as someone mentioned below. this kinda happens when u bake cookies too lol)

that turned out great for your first try! I'm a vegetarian and have only made steak once. I heated it slowly in a pan until rare (timed it) and then seared the outside in a super hot pan (reverse sear). I thought it was good, but my steak experience is v limited!

Great job, you fabulous potato🥰 Your basting was en pointe! The steak’s temp can be expected to climb a few degrees as it rests via something called carryover cooking - it’s why many microwave instructions have the “let sit for x minutes” at the end. It should be pulled off the heat with that in mind. The best/most consistent method, in my opinion(ITS MY OPINION!), is sous vide, it’s very hands off yet very precise. Most InstantPots have a sous vide function. Love you, Po ❤️

OHHHHH CAP? i had no idea what that even was! Googling now to make sure i know where that is. And damn hopefully i figure out how to cook the steak evenly eventually cause it was too expensive to keep messing up

5 min rest after, if you look at the ribeye that top little “cap” is called the spinalis and it’s best tasting part. (You cut a piece of it for doggo) Look for ribeyes with a big cap the one you have is great! Also you did great on the butter basting. Last thing beef is not like chicken bacteria only grows in the surface so as long as it’s seared on the outside you can eat it RAW with no death or sickness lol

I’m no expert lol but what I’ve seen that tends to work best (depending on your cut) is a sear on the outside and turn the heat to like, medium and slow cook it
