All of them...! It's all trained animals, paid actors, stunts practiced a million times before the final shot. Catching moments as fortuitous as these is only possible if you are orchestrating them, this may sound a bit conspiratorial, but I prefer to believe in this instead of the other more scarry option. The other option, being the one where you live with your cell phone glued to your hand 24/7.
