The answer for how Dimension A Akagi and Dimension B Akagi are able to know what transpired in their swapped worlds prior to their arrival can be a simple one or a complex one. The simple way is that they eventually learn they can communicate to each other and briefed each other over their past and the like via body writing. The complex way is, just like Sakuta did in Knapsack Kid when he was swapped over to Dimension B, she slowly learned how her life was/is different in their new worlds by getting pieces of information from the world around them. With each new puzzle piece gained, they painstakingly put the puzzles of who they are together and learn the faults or shortcomings of the other so they can ultimately portray themselves despite being a parallel-dimension substitute.

It was very amusing watching Graham rant at the start of the episode, knowing he was about to find out that he had worked out the "~80%" of the mystery that George had mentioned is the design behind Foreshadowing. It really had me cackling.
For what it's worth, I don't think Graham's feelings are misplaced. I think S2 is a LOT harder to predict/work out than S1. My opinion of that though, is that it is because it is building on itself. The one thing that is consistent about Bunny Girl Senpai is that they always TEASE the future arcs with little scenes/snippets here and there which can cause you to "muddle" the CURRENT mystery with details about unrelated issues. This has been happening since THE START of the show. A couple of examples:
EX.1:
In S1 E1 we meet Koga and Sakuta/Koga "smack butts". In the moment this just seems like a throwaway scene for a 'dirty joke' which is the mainstay of Sakuta's character. But we find out 4 - 5 episodes later that Koga is the next "arc" and that the hypothetical "reason" that he is pulled into her nonsense is because they "smacked butts" (had a strong impact, in Futaba's words).
EX.2: (relevant to now)
We actually got the seeds of Akagi's issues here first given to us ages ago. In late S1 (don't remember the EP #) we get the first shot of Middle-School Sakuta trying to convince his classmates Puberty Syndrome is real. During the scene they briefly cut over and SHOW US Akagi's classmate asking Akagi, the Class Rep, to "fix the atmosphere". (This was flashbacked to during this episode to remind us that we had seen this before). In Movie 3 (the movie where Sakuta switches Dimensions) we are introduced to not only the fact that there is more than 1 dimension. But we also get the High School scene with Akagi and him knowing each other in Dimension 2 as well as the unusual interaction during the College Entry ceremony.
Yet Akagi's arc wasn't until the MIDDLE of S2.
So I guess all i'm saying is just try to remember that this show definitely holds the expectation that you are retaining information from any given point in the series. While reminding you of major things at key moments leading up to the reveal. These are just two examples but every single Arc in the show has been setup, at the bare minimum, in the arc before it (if not even earlier than that.) I think S2 comes across as more confusing because they are more willing to draw on much older setups whereas S1 tended to only do setup for the immediate next arc (With the notable exceptions of course being Kaede for the finale and Shoko for the first movie).
I mean they showed us Santa Claus (Touko) basically right off the bat this season and have been slowly feeding you information on her situation since.

The Ikumi Akagi arc is probably my least favorite arc in bunnygirl. But the next arc is one of my favorites. hang on for a sec graham haha

I think that season 2 is more narratively complex, but even this being my 3rd watchthrough of the 2nd season, the first season is still better imo. I think I felt similar as graham in my first watchthrough.

I'm probably one of those people "not as smart" as you guys, at least as far as mysteries go, and frankly didn't like season 2 all that much my first watch. But it's definitely more enjoyable now the second time through and seeing all the hints I missed as well as the interesting discussions on top ^^
As for the little Mai, during the movie Sakuta seemed to conclude that it wasn't actually a younger Mai but moreso just the likeness of one of her tv roles, so my assumption is that she's simply a representation of something that takes you between parallell worlds (and as such was meant to be a hint that Ikumi was a world hopper).
Also, my assumption from how Shoko brought up Kirishima Touko in the first place (that Shoko remembers all the different lives she lived in the process of trying to save Azuzagawa but she was never a thing before) is that this is something new that happened due to them screwing with time. That even though the universe course corrected most things some small change lead to this mystery singer appearing, but puberty syndrome as such existed before and without her, she's seemingly just helping spread it further.
