Cowboy bebop, OST is great, great classic animation. maybe not main reaction anime worthy but, definitely something you can watch on the side. (If you ever plan on watching multiple shows at once)

I originally recommended Jujutsu Kaisen but I take it back. Mob Psycho has gotta be your next anime by far. It's animation style is so amazing and the characters are so funny

If you want the best the medium has toffer, watch Death Note, Steins;Gate or Vinland saga (which have already been suggested). Out of these three, Vinland Saga would probably be the easiest to approach from a non-anime fan perspective. Many of the shows suggested here have no doubt some recency bias (Mob Psycho, Bocchi, JoJo), but especially Steins;Gate and Death Note have some years behind them and have stood the test of time. However, depending on if you have the time for it and dedication, one of the longer shows like HxH, Gintama or Monster would be great. These might be harder to get into but the choice of sticking to them most often is rewarded. Should you want something more light, you could just pick any of the showes not mentioned in my comment lol. Also pretty much every one of these has amazing music so I think picking one based on that criterion is not really that helpful...

Oddtaxi is my favourite recent anime - it has only 12 episodes and is really unique. Its not so much action based but the dialogues, characters and the story are really awesome. Plus the ending is genius

Dude. It has to be Mob Psycho, you already saw how wild the visuals can get from the openings, and the show itself goes wilder than that. Plus it's fun, sweet, and down to earth; it's an easy watch.

I like the idea of recommending shorter shows since you're just getting into anime, but Jojo is also such a great recommendation. I think Jojo should come later though, and for now either Jujutsu Kaisen, Mob Psycho 100, or One Punch Man. Of those three none have a huge episode list to grind through, and the episodes move at a pretty good pace and each episode is high quality entertainment

Did you say you'd check out JoJos at some point? I think you'd have a fun time with it with all the musical references. Otherwise if you're looking for other very strong beginner anime you can't go wrong with Cowboy Bebop or FMA Brotherhood. I'll hop on the Bocchi the Rock bandwagon too! Such a cute show about bands and music.

If you like comedies, Grand Blue is excellent, incredible humor and it never fails to make me laugh even if I am just reading the manga. Steins;gate is an excellent slow burn sci-fi anime, I highly, highly recommend it

Beck. I watched the subed version but I've heard the english dub is pretty good. Although I like Bocchi the rock I find it hard to recommend to someone new to the media. I'd also recommend Made in Abyss; good anime and also there was Kevin Penkin's music

I'd have to recommend One Punch Man, amazing animation, full of action and actually really funny. The music is really good too and the 1st season is 12 episodes so it's short. If you don't want to watch another action anime, i'd suggest Hibike! Euphonium, since it would be interesting to see you watch something that is related to music, the anime is about a high school orchestral music band and is really well done overall, i think you'd enjoy it too

I'd recommend Bocchi the Rock, Demon Slayer, Attack on Titan, Jujutsu Kaisen, Fire Force, Hunter x Hunter, or Mob Psycho 100. All have good to great music throughout, and to me they're all good fun to watch. Spy x Family and Cyberpunk: Edgerunners are pretty good too if you ever feel the need to change it up from the feel of CSM and some of the others mentioned earlier (though for very different reasons).

Well... It depends on what is YOUR type of show. Besides not sure about your exact anime list. Anyway, a small list of mine: 1) Cowboy Bebop - SciFi adventures. Absolute classic with gorgeous OST. I always recommend it as 1st anime despite many people still insist on "Death Note" 2) Death Note - fantasy/drama/detective. Kind of anime "everyone must watch". 3) Steins Gate - SciFi(time travel thematic)/drama. Mb my favorite SciFi anime. 4) Violet Evergarden - fantasy/drama. Beautiful story to follow. Both visuals and content are top. 5) One Punch Man - fantasy/comedy. Popular funny anime about unordinary superhero. 6) Grand Blue - comedy. Just jokes to laugh out loud. 7) Vinland Saga - Japanese anime about vikings with good plot and solid characters. Sound sweet.

JoJo's Bizarre Adventure is a great show for bizarreness, artistic designs/color palettes, and music/sound design. For excellent storytelling I also recommend Attack on Titan.

Summer time render and promised Neverland come to mind. They have heavy plot twists you won't see coming with a bit of a horror/ psychological element. Promised Neverland was super popular. Not sure about the popularity of Summer time.

It might be a bit long lol, but Hunter x Hunter is my all-time favorite show. Incredible story and has possibly the best soundtrack of any show I've seen. Even if you don't react to it on here, would still highly recommend watching it in general.
