In the small scale I think 'Recettear' does this (albeit with artificial / event based shortages and oversupply) because selling items and goods to people will mean they actually possess them for the future (so selling equipment to adventurers only benefits you in the long run since they're more likely to survive) One of the most reasonable simulations is 'Offworld Trading Company' - prices lower and drop and affect the rest of a game session dynamically. 'Big Pharma' does this in regards to pharmaceuticals. It accurately covers the differing supply/demand dynamics that takes place in the real world (such as real life generic drug manufacturers doing price-gauging in Asia / Africa because there's a lack of competition and they can upmark anti-malarials to 1000/1500% of recommended retail prices). The most autistic simulation of course is going to be EVE online since ships, resources and blueprint copyrights play a big role in power struggles and the capacity of different corporations to control space. However - it's a timesink and there's many better things to spend your life (like smoking, drinking or just generally spiraling downhill with addictive substances). Hope that helps even slightly man. Holy FUCK, just finished one of the most hairiest fight in video games in Depot A. It took luring mutie mutts and acid muties into a room filled with mines, poisoned caltrops, poisoned bear traps. Good thing genades and flashbangs don't get turn locks at the same time, that saved my life.

so around junkyard / core city you can really start getting the blueprints for chemical based weaponry (incendiary or acidic) so there's that but around junkyard and further you can start crafting and finding some pretty sick guns to use

Crusader Kings 2 would be great for some stories. I never considered recommending this because it seemed like it would not be visually good enough for a video, but seeing how you did Dwarf Fortress at this point, Might as well throw it out there, Doubt I'm the first.
