Burning the hair is him letting go so he can move forward. Gotta remember that while we have seen her after she left and understand how seriously she loves him, he woke up alone with a note saying they're not a good match right now. He's bright, but he doesn't always remember and take into account that Eris isn't great with words, so he took that note in the worst way possible. Also Sara kinda got screwed in the anime, well tbh the first part of season 2 has left a lot to be desired overall due to what's been left out. For humanity it's a nobility thing to have a family name, so introducing himself as Rudeus Greyrat tends to have people having some assumptions usually. For Sara, she sees a young noble adventuring and is used to that type of person thinking they're much better than they actually are, putting the party in danger and running away when they're needed. Potentially slight spoiler since I forget when exactly it's learned in the light novel, and whether it'll even be mentioned in the anime. Sara has a bad history specifically when it comes to Greyrats. She grew up in a region that a Greyrat was lord of, and they didn't send her village help when needed which led to her parents dying.
