Since Friday's video is about my banana muffins, we thought we'd share the recipe early with y'all! The reason this recipe is unique is because the proportion of banana is higher than most other recipes I see - so it's really moist and really banana-y. But the other secret is that at the end I drizzle melted butter over all of them and sprinkle on cinnamon sugar. Which I'm pretty sure should be done to ALL muffins. Anyways, here's the recipe! <3 Katelyn

• 1 cup flour
• ½ tsp baking soda
• ⅛ tsp salt
• 1 tsp cinnamon
• ¼ tsp nutmeg
• ¼ cup butter, softened
• ½ cup brown sugar, packed
• 1 egg, beaten
• 2.5 - 3 very ripe bananas, mashed (if less ripe, add more sugar)
• ¾ tsp vanilla
• extra butter and cinnamon sugar (topping)
Preheat oven to 325F. Lightly grease 6-9 muffin tins or use liners. In large bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. In separate bowl, cream butter and sugar. Then mix in eggs, vanilla, and mashed bananas until well blended. Stir wet mixture into dry mixture until just moistened. Spoon into muffin tins. If desired, sprinkle with brown sugar (or wait til after baked and do the butter/cinnamon/sugar topping). Bake for 17-22 minutes, until toothpick comes out clean. Drizzle with melted butter and sprinkle with cinnamon sugar.
