I would love it if you checked out Parasyte the Maxim. Its got great character development, pacing and action. I think you'll enjoy it. The Promised Neverland is a really great dark mystery anime, and Food Wars is also worth checking out.

Strongly recommend the Fate series. It is great with top tier animation and characters but starts a bit confusing due to being based on a game. Baki is also great with some over the top fight scenes. From what others have suggested: Overlord is a fun unique anime and food wars is great. But honestly some of the animes being suggested aren’t up your alley. Imo fairytale is one you won’t like since most of the fights end in power of friendship BS.

Re:Zero has a new season airing in a couple of months and conceptually I think you would reeeaally dig what it has going on. The Promised Neverland is also fantastic and only 12 episodes so far, so you could knock it out pretty fairly quick. Both are very good at keeping you on your toes.

Definitely down for a complete change of pace and going with something like Haikyu it's a volleyball anime but don't underestimate the great story and action within it, it's a great sports anime but it is 3 seasons with a 4th that just started so I understand not picking that, something that is great and short promise Neverland awesome story with so many twists and turns 12eps long blue exorcists is also a great one classic 24eps I think But whatever you decide on I'll definitely be there 👍🏾✌🏾
