I saw enough buzz about her that I thought it wise to draw something with her.
Typically, I have a "canon-ish" body type for characters I draw - something that fits their personality. Then I have other bodytypes, for fun and profit. PrinCel, I feel works as a very tall hourglass figure - then I drew her fat.
(I know nothing of MLP - mostly avoided it. I was at ground zero for the "MLP and 20yo Males Obsessed" period with it in college, and that was a big enough turn off for me.)

I mean, you did draw the best character from the series and did a phenomenal job with it. Canonically she's kinda the show MILF and has a known cake addiction, so I think you're bang-on. Good stuff!
