You lose a lot of weight in the first day of fasting because you burn your glycogen stores, which are an immediate source of energy. Each part of glycogen is stored with 3/4 parts of water, which you also lose. This normally around 3-4 lbs. When you stop dieting and have excess calories you will replenish glycogen and the water, making you gain 3-4 lbs. Some people get freaked out about this, thinking they're gaining back fat quickly, but it's just glycogen.
