Dulce De Leche

Well here we are again! Sorry for the long delay, but life has been getting in the way left and right these days. I'm now working a separate full-time job and needed a little break to address other parts of my life that needed more of my time. I will continue to make recipes, but the schedule may be a little sporadic for a while. This time around I've got a dead simple super tasty recipe for you: Dulce de Leche.

I hope everyone is staying safe and healthy.

Thank you for your patience and for all of your support.

Southwest Chipotle Sauce

This recipe is a clone of one of my favorite sandwich sauces which can be found at Subway. Their Chipotle Southwest sauce has been a go-to for me for years whenever I find myself eating there and this version is even better. And it can function as a sandwich condiment, dipping sauce, salad dressing and possibly more. It is delicious and I hope you enjoy. Thank you all so much for your support.

Fun fact: My go-to Subway sandwich is as follows: Roasted Chicken on Italian Herb and Cheese with pepper jack. Toasted. Add lettuce, tomato, green peppers, banana peppers, salt and pepper and Southwest Sauce.

Parmesan Chicken Sliders

Hello everyone! There are only two recipes this month. Why? Well you may notice that I'm shooting in a new kitchen... We moved again and this month has been absolute madness. I'll be back to my regular count next month.

For this recipe my brother-in-law Scott was telling me about David Chang's podcast and different takes on Chicken Parmesan and he pointed me to this recipe. I immediately love everything about it. Easy, easy to find ingredients, nothing special needed and absolutely freakin' delicous. I hope you enjoy it too and thank you all for your support!

Apple Dew Dumplings

This month I have a theme: Short cuts. Each recipe contains things you can buy pre-made or ready to make at the store and modify.

This recipe has an odd ingredient, but I have to say my skepticism was proven unfounded. It really is delicious. I hope you enjoy as much as I did.

Laura's Favorite Ramen

First up I've got a recipe from my lovely wife Laura. She's one of those people who can dump a bunch of seemingly random things together in a bowl without measuring or recipes and have it turn out great. Then it's up to me to do the detective work of how to recreate it with *gasp* measurements.

"Cajun" Chicken and Rice

Where to even start. The world has changed fairly drastically this month. COVID-19 storming it's way across the world, one job ending, looking for something new, still cooking.

To everyone enduring hardship right now, my thoughts are with you and I can empathize. Thank you for supporting Cooking Comically and thank you just for reading and cooking with me. My greatest hope is that this silly thing that I do might bring you even the tiniest amount of respite.

I was craving some chicken and rice dishes really hard this month and this one stood out to be easy, easy to mod, and delicious. So here we are.

Beyond Smash Burger

(I'm about to gush about something so I should mention that this is not a sponsorship.)

And lastly a meatless burger for the ages. I cooked Beyond Beef exactly as I would cook a smash burger and it worked flawlessly. Not only the best veggie burger I've had, but so close to being as good as my traditional smash burger that it gives me real pause. I mean just look at it...

Beyond Tacos

This is my first real foray into cooking with one of the new plant based meat options (Beyond Meat) and I've gotta say... I'm blown away. With all of the spices and toppings I would literally not be able to tell this wasn't beef in my tacos. It is still a bit expensive, but when it goes on sale I highly recommend giving it a try. My next recipe is even more of a showcase of how versatile it is.
