This recipe is a clone of one of my favorite sandwich sauces which can be found at Subway. Their Chipotle Southwest sauce has been a go-to for me for years whenever I find myself eating there and this version is even better. And it can function as a sandwich condiment, dipping sauce, salad dressing and possibly more. It is delicious and I hope you enjoy. Thank you all so much for your support.

Fun fact: My go-to Subway sandwich is as follows: Roasted Chicken on Italian Herb and Cheese with pepper jack. Toasted. Add lettuce, tomato, green peppers, banana peppers, salt and pepper and Southwest Sauce.

Hello everyone! There are only two recipes this month. Why? Well you may notice that I'm shooting in a new kitchen... We moved again and this month has been absolute madness. I'll be back to my regular count next month.
For this recipe my brother-in-law Scott was telling me about David Chang's podcast and different takes on Chicken Parmesan and he pointed me to this recipe. I immediately love everything about it. Where to even start. The world has changed fairly drastically this month. COVID-19 storming it's way across the world, one job ending, looking for something new, still cooking.
To everyone enduring hardship right now, my thoughts are with you and I can empathize. Thank you for supporting Cooking Comically and thank you just for reading and cooking with me. My greatest hope is that this silly thing that I do might bring you even the tiniest amount of respite.

This is my first real foray into cooking with one of the new plant based meat options (Beyond Meat) and I've gotta say... I'm blown away. With all of the spices and toppings I would literally not be able to tell this wasn't beef in my tacos. It is still a bit expensive, but when it goes on sale I highly recommend giving it a try. My next recipe is even more of a showcase of how versatile it is.
