You can categorize the incoming shopify amounts as Sales (or break it down further for merch sale vs appt reservation income etc) and then pull weekly, monthly, quarterly etc reports on those. Same with expenses.

I think that would be fun for for groups that can’t get a time slot in the store but still want to create something. Maybe there could be a QR code in the kit that links to a YouTube channel of simple instructional videos so people still learn the basics before going full creative. Just a thought.

There might be different factors at work in Texas, but at least in California I think the biggest impedance to a low cost/value refill store is how expensive commercial real estate is. There's no way you're making rent and salary selling Tide and Dawn for 5 cents an ounce. So all the stores focus on luxury products they can sell for multiple dollars an ounce.
